

Low Carb Beef Taquitos

Thanks to Cut Da Carb low carb tortillas/flatbreads, they're really easy to make and taste just as delicious as regular ones! I prefer beef, but chicken or even pork would be delicious as well. You can fry these in the skillet or bake them in the oven- I included both methods below. Either way, these are quick to make, are super crunchy and filling!
Ingredients
- 3/4 Pound Ground Beef
- 1.5 Tbsp Taco Seasoning
- 1/4 Cup Salsa
- 1/2 Cup Shredded Mexican Cheese Divided
- 3 Sheets Cut Da Carb Flatbread cut into 12 equal sections
Instructions
- Pre-heat oven to 400 degrees. Line baking sheet with aluminum foil and lightly spray with non-stick cooking spray.
- Brown ground beef until no longer pink and cooked through. Stir in taco seasoning and salsa; simmer for 2-3 minutes
- Assemble tortillas: Add a heaping spoonful of meat and spread evenly onto each tortilla. Sprinkle with shredded cheese; Roll tightly and put seam side down onto baking sheet.
- Lightly brush tops with olive oil and bake at 400 degrees for 15 minutes. Serve with salsa, sour cream, queso or guacamole for dipping.
- To fry taquitos: Cook ground beef and assemble taquitos as directed in steps 2 and 3. Heat olive oil over medium heat in a large skillet. Add the taquitos seam side down and cook for about 20 seconds per side or until golden brown. Place on a paper towel lined plate and serve with salsa, sour cream, queso or guacamole for dipping.
