Preheat the oven to 350 degrees F
For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Cook for another minute. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes and cook until water is evaporated and the mixture is thick
For the Shells: Spray Cut Da Carb Wraps with your choice of cooking spray on both sides. You can also brush with butter, if you prefer
Cut each sheet to 4 pieces
Fold each piece to a cone shape and secure with a toothpick
Add half teaspoon of cheese to the bottom of the cone to seal the end
Add ground beef mixture and cheese. Crunch up a small sheet of foil and place in the cone so it helps the cone keep its shape
Bake for 5 minutes or until the cheese is melted. Take the cones out of the oven and let sit to cool
Add the rest of the beef mixture, cheese, tomatoes, lettuce and enjoy!
